Huong, Nguyen Thi Minh is a PhD student at the Department of Agricultural Economics, Ghent University. She started her PhD in October 2025 under the VLIR-UOS project. Before joining Ghent University, she obtained a Master’s degree in Animal and Food Hygiene (Agricultural Economics) from Obihiro University of Agriculture and Veterinary Medicine. She is currently a lecturer at the Faculty of Business Administration, University of Economics, Hue University, where she conducts research on consumer behavior and stakeholder dynamics in the food industry.
Huong’s research focuses on consumer behavior towards “ugly” fruits and vegetables to contribute to food loss and waste (FLW) reduction in Vietnam. By applying a mixed-methods approach, including both qualitative and quantitative analyses, she aims to explore consumer perceptions and develop strategies that promote the consumption of imperfect produce. Ultimately, her research seeks to address the social, economic, and environmental challenges associated with FLW in the fruit and vegetable industry.
