Josefina Ballesteros is a doctoral researcher at the Department of Agricultural Economics, Ghent University. She holds a Bachelor of Science in Agribusiness from the Visayas State University, Philippines, and an International Master of Science in Rural Development from Ghent University, Belgium and University of Pisa, Italy under a VLIR Scholarship. Prior to pursuing further studies, she worked as a researcher focusing on consumer-oriented rice-based food product development at the Philippine Rice Research Institute, and as a senior economic development specialist at the Department of Economy, Planning and Development Regional Office VIII (formerly National Economic and Development Authority) in the Philippines.
Josefina is involved in an interdisciplinary project funded by the Research Foundation – Flanders (FWO), in which, in its entirety aims to integrate and validate virtual reality (VR) technology in experimental auctions, seeking to establish a novel approach to reconcile ecological validity with controlled experiments, for better understanding of consumer preferences for insect-based foods. Specifically, her doctoral research will focus on identifying and analyzing the factors influencing consumers’ willingness-to-pay for insect-based foods, as elicited through VR-based experimental auctions.
